CARROT PICKLE

CARROT PICKLE
INGREDIENTS:
  1. Carrots – 15
  2. Onions – 2
  3. Garlic ginger paste – 1 tsp
  4. Dry red chilies – 2
  5. Curry leaves – 10
  6. Sugar – pinch
  7. Lemon juice – 3 tsp
  8. Mustard seeds – ½ tsp
  9. Urad dal – 1 tsp
  10. Oil – 3 tbsp
  11. Mustard powder – 1 tsp
  12. Cumin powder – ½ tsp
  13. Methi powder / fenugreek powder – ¼ tsp
  14. Red chili powder – 2 tsp
  15. Coriander powder – 1 tsp
  16. Salt according to taste
  17. Asafoetida / hing – Pinch
PREPARATION:
  1. Chop and grind onions into paste.
  2. Heat oil in a pan. Add mustard seeds, cumin seeds, urad dal, dry red chilies, curry leaves, hing, garlic ginger paste and onion paste to ti and fry for few minutes.
  3. Off the heat and add finely chopped carrots, coriander powder, mustard powder, cumin powder, fenugreek powder, red chili powde, lemon juice and salt to it.
  4. Mix well and serve with rice or chapati.
