CARROT AND BEETROOT HALWA


INGREDIENTS:
  1. Grated carrot - 1 cup
  2. Grated beetroot - 1/2 cup (Peel and grate)
  3. Milk - 3 cups
  4. Sugar - 1 cup
  5. Cardamom powder - 1/4 tsp.
  6. Raisins - 8
  7. Cashew nuts - 6
  8. Ghee / Unsalted butter - 1 and 1/2 tbsp.

PREPARATION:
Take milk into thick bottomed vessel and boil till it becomes almost half. Keep it aside.Heat ghee in another pan fry cashew nuts and raisins and take them into a small bowl. In same pan with remaining ghee add cardamom powder, grated carrot and beetroot. Fry them on medium flame for five minutes. Add boiled milk to it and cook this carrot and beetroot mix and cook for about ten minutes. Add sugar and mix well. Cook till sugar melts. Garnish with roasted raisins and cashews and serve.
