NEELAGIRI PARATHA RECIPE

NEELAGIRI PARATHA RECIPE


Indian flat bread made with wheat flour, mint, coriander and spinach.

INGREDIENTS:

  1. Wheat flour - 1/2 kg
  2. Mint leaves - 2 cups
  3. Spinach leaves - 4 cups
  4. Coriander leaves - 1 cup
  5. Green chilies -5
  6. Cumin seeds - 1 Tsp
  7. Salt according to taste
  8. Oil
  9. Water
PREPARATION:

Soak spinach leaves in hot water for few minutes and then drain water. Take mint, chilies, spinach, coriander, cumin and salt into blender and make thick paste. Add this paste to wheat flour. Knead the flour until you have soft and pliable dough.  Heat the griddle over medium-high heat. Divide the dough into equal lemon sized balls and start working with each ball separately.  Roll it into approximately 6 inch circle of uniform thickness. While rolling the chapati if the dough sticks to the rolling surface, dust it and the surface lightly with little flour.Place the rolled chapati on the hot griddle and cook for 30 seconds or until tiny golden dots appear on the bottom, flip over to the other side. Once the other side is also covered with larger brown dots, turn it over again. Neelagiri paratha is now ready to serve with any curry.
